Bento: The First of Last Week

Going to try a new thing where I post an entire week of bentos (though only 4 because Andrew goes out with coworkers once a week).

Menu: Getting a Chair

Been using Andrew’s chair and he was using the couch but today we’re finally going out to get me a chair and set the whole house in order. It’s pretty exciting and I’m looking forward to it because even though laptops are very portable it’s still much easier to use one on a solid desk while you’re sitting at a chair. Also I think this week I will be able to actually prep all of the food on Sunday instead of how I’ve been doing a little bit every day of the week.

Menu: Almost Normal

We have a gas oven here which has been an adventure to me but I’ve almost got the swing of it. This week I will be shopping for more normal things instead of trying to stock up on stuff so it’ll be interesting to see how the cost stacks up. Otherwise menus will probably continue not to be too exciting for a while as I suss out the rest of life in Tallinn.

Menu: Live from Estonia

I know it’s been almost a month since I posted a menu but I had a really good reason: I moved to Estonia! Between visiting family and wrapping up things in the US and getting our life started here in Estonia only 4,800 miles from home it’s taken a bit to get to the point of weekly prep and cooking. I missed it though so here’s the menu I’m hoping to make for this upcoming week 🙂

Recipe: Potato Pancakes (Latkes)

Potato pancakes are one of the most basic food. The odds are very good you have a potato, onion, and eggs just hanging around your house so this is a great meal or snack for a night when you don’t want to make anything too fancy. The texture of these will change depending on which way you grate the potatoes. I just simply used a mandolin to julienne them but feel free to use a box grater or even get your lazy on and drop them in a food processor!

Recipe: Vegetable Pad Thai

Who doesn’t love Pad Thai? It’s the perfect Thai style blend of sweet, sour, salty, savory, and spicy flavors. I always assumed it was difficult to make but actually it only takes a couple of minutes! The hardest part is going to the store and getting rice noodles which is something I don’t usually keep on hand. You can make this easily vegetarian or vegan with a couple quick swaps but I like fish sauce too much myself!

Recipe: Taco Rice Bake

All the flavors of a taco neatly baked in to a casserole. My only problem with this recipe is that because it uses cans you can’t halve it really neatly unless you’re making something with the other half of those cans and this really makes eight full servings of food and I tend to enjoy it the first three times and then get bored and it doesn’t freeze particularly well.
