Scotch eggs are British/Scottish/English pub food and they’re usually fried but since I’m not a big fan of fried food I went ahead and baked them instead. They’re actually fairly simple to make but they do make a bit of a clean up job since they need to be dipped in multiple things (plus there’s no way to make them except for sticking your hands in everything!).
Menu: Memorial Weekend
I’m happy to say that this will be a full three day weekend and that I have made no plans so that I can catch up on my cooking, cleaning, and chillaxing. I have a very ambitious menu to make my ambitious do to list so I’m not sure how closely I can stick to it, but worth a try just like everything else huh?

Recipe: Minestrone Soup
Minestrone is glorified vegetable soup. It’s usually made with whatever is in season and often contains pasta or rice and always has beans in it. I’m not a really big of this soup in restaurants as it’s usually served very thin with a ton of pasta and not much in the way of vegetables and also usually has a beef base which I don’t like. I made mine with vegetable stock but feel free to make yours with chicken or beef if you have that instead. This recipe makes about 8 servings but could be easily scaled down.

I’ve almost caught up my queue of recipes so this weekend I’ll be hunkering down and adding more to the queue. It helps to not have to post every single week and just do it all in one go. Since we had a lot of company this past week I’m making very simple dishes so I can enjoy only having a feed 2 people π

It’s been a hectic week so I’ll only being trying one new recipe. Even though it’s a traditional recipe I’ll be baking it instead of frying (I don’t like the hassle/grossness of frying personally) so we’ll see how it turns out. I also bought a lot of meat this week which is something we usually don’t eat but it was all on sale and I guess the nice weather made me go daffy for a minute.

Earlier this week I’d hurt my wrist while I was sleeping but thankfully it seems to be on the way to healing nicely meaning I can finally cook, type, and clean without wincing. I plan to spend today making all sorts of tasty treats and watching some Doctor Who.

For fruit we have grapes and apples. Since baking something that can be had all week worked well last week with the quiche and piroshkis, I’m making curry pan this week in the same way. Lots of little ones that I can just drop in a lunchbox in the morning for easy packing/eating.

Recipe: Cheesy Broccoli Soup
A super simple way to make broccoli disappear in a matter of minutes. Creamy, rich, not all that good for you but delicious. I actually would use much less cheese and then taste and add as much as you need because I dumped it all in the first time and it was actually too cheesy I ended up putting in some stock to thin out the flavor.

Bento: Wild Bentos
I haven’t made very many pretty bentos but I have been much better about packing lunches and cooking food ahead of time. Part of the problem is that you have to wash the bento every single day which doesn’t always happen due to laziness. Anyway, here are two nice ones from last week.

Very simple gyro salad with a yogurt-cucumber sauce on the side.

This one is a bit fancy looking isn’t it? Lemon-Pepper Cod, rice, tomatoes and baked spinach.
Hopefully I keep making them this week!

The weather has not been kind to us in Seattle this month and it’s been a roller coaster of hot and cold over the past 3 weeks including 2 days of snow. Usually it’s about 55 in March but this year I think the average is more like 35 (burrr!).
