I didn’t realize that I’d actually taken a break there from posting menus. I guess I just busy with life in the usual way though it was a nice break since everything else on the site is set to push all the way out to September. Of course I’ve got my own menu in the house

Menu: Veggie Fest

Looks like I forgot to post my menu last week but no worries because here’s the one for this week. We’re going to VegFest on Saturday which is the Seattle vegetarian and vegan festival and there’s about 200 samples so that’s kind of like eating lunch, right?

Recipe: Vegetable Stuffed Ziti

This recipe uses extra vegetables so you can use less pasta. It’s really delicious and has a nice pleasing way of making you feel full (pasta, vegetables, and cheese do that though I guess). The best part about this recipe is that it doesn’t take much effort and if you have leftover cooked pasta around it’d be even less effort.

Recipe: Vegetable Pancakes

I love these pancakes and they turn breakfast for dinner in to a much healthier prospect overall. You can use store bought mix or any other pancake batter that you like as well as substituting any vegetables you like in to the batter. I like to use carrots and zucchini because they are both mild and a little bit sweeter than your average vegetable though.

Recipe: Okonomiyaki

Basically okonomiyaki are like a savory Japanese pancake that is shoved with whatever you like (the word okonomiyaki is literally “what you want”). This is a pretty basic one with just some dried tuna flakes and cabbage but you can pretty much put in anything you want from blue cheese to fish eggs to ground bison – whatever you have laying around. You can pick up the Japanese ingredients in a specialty Asian store or on Amazon.

Last week was a little more out of hand than usual so this week we’re pulling back a little.
