Menu: Planning Win

I did great with planning and execution this week so flying on that high I made a really simple menu in hopes that I can continue that trend (I always feel better if I manage to cook and eat all the things on my list). And yes, I am making scallion pancakes again! They were so good that both of us agreed we should eat more of them right away.

I packed the same thing on Tuesday that I had packed on Friday so it hardly seemed worth taking a second picture of it (despite clearly having packed the same thing probably a few times before inevitably but somehow it was just too boring and samey for me this time.

I’m behind with posting everything but I got some important stuff done this weekend so I’ve already moved on from forgiving myself. I wonder if it’d be worth it to try and plan out an entire month (broken in to week of course) or if that would just make the first week of every month a mess? Eh?

Recipe: Refried Beans

A basic staple of cooking re-fried beans. I hemmed and hawed if I wanted to post this recipe because it’s so basic and also because I used to buy re-fried bean (gasp!) instead of making them but since moving to Estonia that is no longer an option so now I make my own. They’re super easy to make and delicious so if you don’t have access to canned ones, give it a go.

We got a new refrigerator and it’s a new lease on food because there’s suddenly enough space to actually freeze things, keep leftovers, and so on. This week is a pretty aggressive menu and a lot of groceries but somehow it’s one of those weeks where we are out of every food and it’ll be good to stock up going in to August I think.

Considering it’s past halfway through the year I just did a quick calculation and I posted bentos for 20 out of the 29 weeks so far, about 70% of the time. That seems really good. A few weeks I didn’t post because I only made one or two or didn’t take pictures and for five week this year I was on vacation so actually, it’s even better than that. Go me!

I don’t know why I cannot seem to get back in the groove with cooking but it looks like we’ll be getting a new fridge next week or the one after that so I hope it helps. Food prices went up here NOTICEABLY which is sort of strange because it’s the summer which in theory should have lower food prices but what’cha gonna do?
