Our first week in the new apartment. CSA is still rolling on strong.

CSA bounty:
2 pounds new fingerling potatoes
1 pound fresh fava beans
2 fennel bulbs
1 pound summer squash
1 bunch Red Ace beet
1 bunch rainbow chard
1 head Flashy Butter Gem lettuce
1 bunch chives
2 heads fresh garlic
2 pounds of Skeena Cherries
.5 pounds Rainer Cherries
8 Sundrop Apricots

Recipe: Chicken Pot Pie

Who doesn’t love a chicken pot pie? This recipe is a little time intensive but you can save time by making the crust and filling ahead of time or just using ready made pie crust. You can freeze this pie pretty well before baking and cook from frozen (adding some time to the final bake) but it’s also delicious piping hot out of the oven and makes great leftovers for several days.

Since we’re busy packing and about to move in our new place we’re cleaning out our fridge which means a lot of stir fry, omelets, and eating very boring food!

There’s plenty of recipes that I went to try when I move in to the new place though and since the cooking has been boring, at least the linking can be interesting (I hope!). Expect a menu and CSA report on Tuesday like usual though <3

Lemon Risotto – I have a weakness for risotto and haven’t made it in a while. I will probably change up the veggies in this recipe and maybe the flavors but this looks pretty solid and easy.

Enchiladas – I have never eaten or made these – yikes! I’m definitely over due on that.

Carrot and Chicken Stew – We get fantastic carrots in tons of varieties from our CSA and this sounds like a great way to them all.

Chicken Tortilla Soup – Just looks heavenly doesn’t it? Nice and cozy!

May add more to this list over the next few days but those are my culinary plans so far. ’til next time!

Menu: Fruit Share Day!

CSA is now officially in full swing this week we start our fruit share AND we have onions in this weeks basket.

Here’s the stuff in this week’s CSA and I’ll be back to edit with a menu later today:

1 pound shelling peas
1 fresh sweet onion
1 bunch Nantes carrots
1 bunch Red Ace beets
1 bunch Easter egg radishes
1 bunch green onions
1 bunch Summerfest Komatsuna (bok choy)
1 bunch garlic scapes
1 head fresh garlic
1 Flash butter gem lettuce
1 bunch dill

2lbs cherries
1 quart strawberries
1 pint raspberries

Menu: New Routine

Trying to get a new routine going since we now don’t get any notice on what our CSA contains until the day I go pick it up (that’s today – Tuesday).

Meaning menus have to revolve around that and we have to adjust our shopping trip to Tuesday also (instead of Thursday). Lots of change but hopefully we’ll be able to adapt fairly quickly. Continue reading

Menu: Back to Friday

I guess I’m going back to Friday menus for this week. I also have a few new recipes up my sleeve this week! Because we waited SO LONG to go shopping that our fridge contains:
1 onion
1/2 tub sour cream
1 open jar red curry
1 open tube of tomato paste
3 sticks butter
and of course
1 stick of lemongrass (been there for a while…)

Our freezer is a little heartier:
3lbs chicken breasts
2 lbs shrimp
1/2 lb spinach
1 baggie of fennel (chopped)
3 baggies of herbs (basil/parsley/cilantro)

So in all not that much food going to happen from there even though with those meats I could squeeze a few extra meaty meals from it.

Recipe: Basic Cinnamon Rolls

I love cinnamon rolls plain but you can frost these babies too. I used a basic butter butter cream but you can frost with cream cheese if you’re feeling that instead. This is a great recipe which actually takes about 15 active minutes of doing anything, it’s a lot of waiting but of course when you come out with soft, gooey cinnamon rolls it’s worth the wait!
