A basic staple of cooking re-fried beans. I hemmed and hawed if I wanted to post this recipe because it’s so basic and also because I used to buy re-fried bean (gasp!) instead of making them but since moving to Estonia that is no longer an option so now I make my own. They’re super easy to make and delicious so if you don’t have access to canned ones, give it a go.

We got a new refrigerator and it’s a new lease on food because there’s suddenly enough space to actually freeze things, keep leftovers, and so on. This week is a pretty aggressive menu and a lot of groceries but somehow it’s one of those weeks where we are out of every food and it’ll be good to stock up going in to August I think.

Considering it’s past halfway through the year I just did a quick calculation and I posted bentos for 20 out of the 29 weeks so far, about 70% of the time. That seems really good. A few weeks I didn’t post because I only made one or two or didn’t take pictures and for five week this year I was on vacation so actually, it’s even better than that. Go me!

Menu: Long Last Month
I have a very good excuse for not posting a menu in a month: I was on an extended vacation with my mother the whole time! It’s been a huge trip and I’ve eaten some new and exciting things but it’s always nice to come home and have a kitchen that’s all my own again too. No Saturday and Sunday this week because my mother is still here so we’ll go out but an almost full week after that 🙂

Recipe: Chicken with Snow Peas
This is actually a really easy to make meal. It isn’t exactly like take out but it’s also not completely healthy either so it fills that need for take out without having to do too much work and unlike a lot of Chinese-American food it isn’t fried so it’s not too terrible as long as you’re not worried about salt content. You can easily switch out snow peas for broccoli/other vegetables or add them in this one dish, just make sure to par-boil or soften them in the microwave beforehand so it all cooks together.

Unlike my other pretzel recipes for softer type pretzels, these come out with the hard tack shell of the outside and the just soft inside like you’d see in a pub. They’re perfect for dipping, game night, or serving as a fun side with a thick soup.
