Sometimes you just want something in nugget form but you also want vegetables and this is basically the perfect fusion of those two ideas. These are pretty easy to make if you use a food processor to chop up the vegetables and if you bake them in the oven they’re really low effort but they do taste much better when pan fried. Depends on if you’re willing to spend a little more effort for better tasting food.
Veggie Nuggets
Add the cauliflower, carrots, and onion, eggs, 1/2 of the breadcrumbs, cheese and spices in food processor and pulse for 15 seconds or until well combined. You can add a small amount of cold water if the texture is too crumbly.
Form mixture into balls, and then flatten slightly into a nugget shape (I got about 20-25 "nuggets").
Place remaining breadcrumbs in a dish and coat each nugget with breadcrumbs.
To cook: Heat a small amount of oil in a frying pan, add 4-5 nuggets in the pan and fry on each side about 4-5 minutes until brown and crispy.
