This is a great lunch recipe. It’s quick, easy to make, you can add anything you like in to it and you can even make a few different flavors for different people (if you have fussy people in your house). I make mine with onion, peppers, and mushroom but feel free to use any of your favorite pizza toppings even pineapples and ham just make sure any meat you used it cooked and that any toppings are cut in to small pieces.
Pizza Bites
Preheat the oven to 375°F & spray muffin tins with cooking spray and set aside.
In a large bowl, whisk together the flour, garlic powder, onion powder and baking powder then add the milk and egg, and whisk to combine.
Stir in the mozzarella and vegetables (or other toppings) and let set for 10 minutes.
Divide the batter into the muffin tins. Take the remaining 1/2 cup mozzarella and sprinkle a little on each one. Pop in the oven and bake until puffed and golden, 20 minutes. Serve with tomato sauce for dipping.
