Recipe: Daigaku Imo (Candied Sweet Potatoes)

An easy and lightly sweet side dish if you want to make sweet potatoes just a little more fun. You can see in the picture I really got the edges a bit too dark but actually they still tasted really good like that. Just be more observant and you should be fine.

Ingredients
 1 sweet potato, diced
 1 tbsp honey
 2 tbsp sugar
 ½ tsp soy sauce
 toasted sesame seeds
 4 tbsp oil, for frying

Parboil the sweet potato for about 10 minutes then drain and pat dry.

Heat oil in a frying pan over medium high heat. Add potato and fry both sides, flipping once golden, about 10 minutes per side.

Into the frying pan add the honey, sugar and soy sauce in the pan over low heat and stir around until thickened then and coat the sweet potatoes by turning them over several times.

Sprinkle with sesame seeds.
