Delicious and homey this dish is a little heavy for normal days but sometimes you just want to slip in to a food coma and that’s what this recipe is for.
Chicken and Dumplings

Ingredients
2 tbsp olive oil
2 lbs chicken, diced
¼ cup flour
1 onion, chopped
4 carrots, diced
2 stalks celery, diced
1 bay leaf
1 spring thyme
¼ tsp tumeric
salt and pepper
4 cups chicken broth
fresh parsley
Dumplings
1.50 cups flour
2 tsp baking powder
½ cup cornmeal
1 tbsp sugar
1 tsp kosher salt
1.75 cups milk or heavy cream

In a heavy pot heat the olive oil.

Brown the chicken in the oil over medium heat, about 2 minutes a side. Remove and set aside.

Add the onion, carrots, celery, bay leaf, thyme, turmeric, salt, and pepper and cook for about 5-6 minutes.

Stir in the broth and add the chicken back to the pot and simmer for 15 minutes.

Meanwhile, in a large bowl, combine the dumpling ingredients until combined.

Drop about the dumplings in heaping tablespoons then cover and simmer for 12-15 minutes until dumplings are cooked.
