Recipe: Black Bean Enchiladas

I had never had enchiladas before so this was an experience in deliciousness. The sauce came together almost instantly and without effort and the bean burrito things were beyond delicious. This makes a surprising 8 enchiladas which we ate over 4 nights. This was also extremely spicy but I blame that on the way too hot salsa I used.

Recipe: Chicken Pot Pie

Who doesn’t love a chicken pot pie? This recipe is a little time intensive but you can save time by making the crust and filling ahead of time or just using ready made pie crust. You can freeze this pie pretty well before baking and cook from frozen (adding some time to the final bake) but it’s also delicious piping hot out of the oven and makes great leftovers for several days.

Recipe: Basic Cinnamon Rolls

I love cinnamon rolls plain but you can frost these babies too. I used a basic butter butter cream but you can frost with cream cheese if you’re feeling that instead. This is a great recipe which actually takes about 15 active minutes of doing anything, it’s a lot of waiting but of course when you come out with soft, gooey cinnamon rolls it’s worth the wait!

I haven’t been baking much thanks to some grueling hours at work and very exciting weeks during the holiday season but I do have a menu plan for this week that I intend to attempt to stick to as well as a nice homey recipe that’s perfect for a quick wintertime dinner.

Recipe: Chicken Tikka Masala

There’s a bit of rumor and mystery that surround Chicken Tikka Masala. Where it started isn’t quite certain but it’s wildly regarded as delicious! Probably a food born from export back to England from India this unique dish  can be enjoyed by people who like the taste of savory curry without heat. There are dozens of versions of it but this one is one that very much suits my tastes.
