Recipe: Chicken and Rice Soup

This recipe requires very little effort aside from some chopping which can pretty much be done at the same time. Very delicious too, we ate half for dinner and then half for lunch the next day.

Ingredients
 2 chicken breasts
 1 tbsp olive oil
 1 onion, chopped
 2 cloves garlic, minced
 2 carrots, diced
 2 celery ribs, diced
 ½ tsp thyme
 2 qts chicken stock
 1 cup water
 ¾ cup uncooked white rice

Directions

Boil a small pot of water and poach the chicken in it for about 10 minutes until no longer pink in the center.

Shred or cut chicken and set aside.

In a large soup pot add the olive oil, onions, carrots, and celery and cook for a few minutes until the onions are clear.

Pour in the water, chicken broth, and thyme and bring the mixture to a boil.

Add in the chicken and rice and cook for about 20-25 minutes, the rice should be soft.
