This soup has a wonderful simplicity to it. Sometimes coconut in soup can be really cloyingly sweet of overwhelming but in this soup its nicely balanced with the soft flavor of rice and the heartiness of mushroom. Since this takes only a few minutes to come together it’s perfect for when you don’t feel well or on a cold night where you just want a warm dinner right away.

It was snowing so much this week that I didn’t feel like being bothered with going to get groceries so I decided for the first time to get delivery ones (!) so we’ll see how that works out. Despite the cold weather I’m trying to stray at least slightly away from pure comfort food that I seem to want to inhale at this time of the year but you be the judge of how well that’s going.

I know it’s almost January but actually it does still feel like December a little?
