Menu: Ambitious

This is a very ambitious menu that banks on me wanting to cook and make many different things but somehow all my side dishes are still boring (!) but we’ll see how it shakes out. Now that’s colder outside, cooking does look much more attractive as a pastime.

Oh boy, a lot of salad and apples this week. Only four lunches because Andrew got to be on a yacht all day on Tuesday so that’s pretty cool. Maybe next week will be more varied but, this week wasn’t except for the main dishes so that’s something:

Menu: A Little Festival

I did great with planning and execution this week so flying on that high I made a really simple menu in hopes that I can continue that trend (I always feel better if I manage to cook and eat all the things on my list). And yes, I am making scallion pancakes again! They were so good that both of us agreed we should eat more of them right away.

This week went really well in terms of food (and honestly, in terms of not-food also) which probably means that next week might be a struggle but I really liked all of these meals and we ate everything 🙂

I packed the same thing on Tuesday that I had packed on Friday so it hardly seemed worth taking a second picture of it (despite clearly having packed the same thing probably a few times before inevitably but somehow it was just too boring and samey for me this time.

Recipe: Refried Beans

A basic staple of cooking re-fried beans. I hemmed and hawed if I wanted to post this recipe because it’s so basic and also because I used to buy re-fried bean (gasp!) instead of making them but since moving to Estonia that is no longer an option so now I make my own. They’re super easy to make and delicious so if you don’t have access to canned ones, give it a go.
