Orange Cookies
Preheat the oven to 190°C and line two large baking sheets with parchment paper or silicone mats.
In a large mixing bowl beat the sugar, butter, and zest together on medium speed until light and fluffy, about 3 minutes then add the egg, and beat until well combined.
With the mixer on low speed, add the flour, baking powder, and salt and then slowly add in the orange juice until fully combined.
Scoop the dough into 1 tablespoon balls onto the cookie sheet, spacing them about a few centimeters apart.
Bake one sheet at a time for 10 to 12 minutes until the edges just to start to color and the center of the cookie is firm. Cool the cookies completely before icing.
Make the icing by mixing with a whisk the sugar, juice, and butter until it forms a thick consistent icing. Coat the tops of each cookie and let sit for at least 30 minutes until set.
