Recipe: JoJo Potatoes
I’d never had Jojo potatoes until I moved to Seattle and then I forgot they existed for 10 years but actually they’re really good and easy to make. I’m sure the original ones are fried but this baked version is easier and just as good. You simply shake wedges of potatoes in flour, fat, and spices and cook until the inside is fluffy and you get jagged flavor edges that really hold on to sauce well. Definitely worth the very minor extra effort it to shake up your oven potato routine.

Ingredients
20gmelted butter
20gvegetable oil
750gpotatoes, sliced into 8 wedges each
40gflour
10gsalt
5gsmoked paprika
2gcayenne pepper
2gblack pepper

Pre-heat oven to 180° and prep two baking sheets with by coating them with aluminium.

In a large sealable container [Tupperwear or plastic bag] places all of the ingredients and shake until completely coated. You may need a small amount more oil or flour to coat fully.

Divide the coated potatoes between the two sheets being careful to make sure each potato is touching the aluminimum on one cut side.

Bake for 15 minutes, then rotate the sheets in the oven.

Bake another 5-8 minutes until they start to look slightly dry then broil for 3-4 minutes to get a nice crisp outside.
