Recipe: Nkoko Rolex (Chicken Rolled Egg Bread)

This is a very popular kind of Ugandan street food which is called a rolex because it’s portmanteau of “rolled eggs”. These can basically have anything your heart desires as long as you have a chapati (which is made from plain flour in Uganda) or other flatbread as the base and then a thin omelette on top of that. Play around with the vegetables and even add cheese or sauces to your taste. This is a great lunch food because it’s quick and easy and can be made out of leftover odds and ends.

Ingredients
 1 chapati (or tortilla or thin wrap)
 2 small eggs (or 1 large)
 50 g cooked chicken or other cooked meat, finely chopped
 ½ red onion, diced finely
 ½ tomato, diced finely
 ¼ tsp garlic powder
 ¼ tsp cayenne pepper
 handful of coriander, minced

Directions

In a hot frying pan add a small amount of butter or oil. In a bowl, whisk the eggs and just as they set add in a handful of the tomatoes and onion (reserving the rest for the meat). Cook until completely set then place on top of the chapati.

To the still hot pan add the rest of the vegetables, chopped chicken, garlic powder, and cayenne and cook for 3-5 minutes until the tomatoes and onions have broken down. Add the meat on top of the egg spread to the edges.

Add the coriander to the top of the chapati pile and then roll until folded all the way.
