Recipe: Migas

If you left your tortillas on the counter last now and they are now hard tack or if you have leftover tortillas but not enough to actually fry for chips this is the perfect way to use them up. Migas is supposed to be finest hangover cure as well and considering it’s a bomb of protein and carbs that’s probably not completely inaccurate but I’d stick with the fact that it’s a nice breakfast.

Ingredients
 1 tbsp butter
 2 large corn tortillas
 1 jalepeno, chopped
 1 garlic clove, minced
 5 eggs, beaten
 cilantro, salt, pepper, cayenne, cumin

Directions

Heat the oil in a skillet over medium heat. Add the tortillas and fry, stirring frequently, until very browned and crispy

Turn down the heat and add the jalapeño and garlic, sauteing for 1-2 minutes.

Add the eggs and stir frequently over low heat until the eggs are nearly cooked.

Remove from heat, add cheese and serve with beans, rice, salsa, or other add ons.
