Recipe: Masoor Dal
Quick, delicious and filling red lentils made from pantry staples and things you probably have lying around the house. You can serve this with almost any carb you can think of: rice, roti, naan, paratha, even sourdough bread or biscuits if you want to go crazy and it comes together in 30 minutes without much supervision so it’s great for a weeknight or when you just can’t babysit dinner.

Ingredients
1tspoil
1red onion, chopped
1tspginger powder
2tspgarlic powder
2tbsptomato paste
½tspeach: turmeric, salt, kashmiri chili, cumin, garam masala
¼tspamchoor
250gred lentils
600mlwater
optional: cilantro, methi, ghee, for topping
Directions

To a dutch oven or heavy bottom pot add the onions with a small amount of oil and salt and allow to sweat for 5-6 minutes.

Add the ginger, garlic, tomato paste, and other spices to the pan and stir for 60 seconds until fragrant.

Add the lentils and water, stir everything together and put heat on low and allow to cook for 25-30 minutes until the lentil are soft enough to break apart with a spoon.

Adjust seasoning then top with ghee, cream, and/or fresh herbs.
