Recipe: Kalasouna

This is an extremely pleasant cheese pie that is made even better with addition in chopped onions. In the future I would definitely whip the feta for an even and soft texture. I have never actually eaten one of these before and saw pictures online of both square and round versions, I eventually opted for the round but you should follow your heart. This is a great snack or light lunch if paired with a soup or salad that’s not too much work and can be made ahead of time.

Ingredients
Dough
 250 g flour
 4 g dried yeast
 40 ml olive oil
 120 ml water, warm
 2 tsp lemon juice
 salt
Filling
 250 g feta, whipped
 2 small onions, grated or minced
 1 egg
 salt, black pepper

Directions

Make the dough by mixing together all of the dough ingredients in a bowl and kneading in the bowl, with your hands, for 5-7 minutes until you get a smooth, elastic dough that is not sticky. Add more flour as needed. Cover and set aside from 30-60 minutes to rest.

Make the filling by mixing together all the filling ingredients in a bowl and add salt, pepper, or herbs to taste.

To make the pie: Preheat the oven to 200°C. Divide the dough into two equal pieces. Roll one piece of dough out into a circle (or your choice of shape) on a silpat or parchment paper to a width of about 1/4-1/2" thickness.

Sprinkle flour over the rolled sheet of dough then fill evenly with the filling leaving a small perimeter around the edges to seal.

On a flat, floured surface roll out the second piece of dough to the same size and shape as the first one, then carefully lift the dough off the surface to fully cover the piece of the baking sheet. Roll the sides of the dough underneath to seal the pie.

Brush the top with olive oil and poke or cut a few holes for steam to escape then bake for 30-35 minutes until golden brown on top. Wait until completely cooled to serve.
