Recipe: Focaccia Pizza

If you’re stuck in a rut of pizzas this is a great way to change things up a little. It’s still very low effort and requires just 10 minutes and the knowledge that you’re going to have pizza that night. This pizza comes out of chewy and flaky. Make sure you don’t put too many toppings on, one or two is the maximum it can hold (and make sure they’re cooked or dry because too much water will make the pizza soggy). Because there are so few ingredients make sure you salt your dough well and season your sauce if you want something out of this world.

Dough
 250 g flour
 2 tbsp olive oil, more for greasing and coating
 4 g yeast
 160 ml warm water
 6 g sugar
 3 g salt
Toppings
 100 g pizza sauce / tomato passata
 125 g mozzarella

Directions

Make the dough by combining the flour, sugar, salt and yeast in a large mixing bowl make a well in the center and adding the warm water and olive oil. Mix dough with your hands until a rough dough forms then knead for 10 minutes on a flat surface with a small amount of flour until smooth and elastic.

Grease a bowl and place dough inside and allow to rise in a warm place, covered with a damp kitchen towel, for at least 2 hours and up to 4 hours.

Pre-heat the oven to 250°C. Take olive oil and completely grease the bottom of a 9x9 glass baking dish. Press dough into a glass baking pan and allow to rise again for 15-30 minutes while the oven preheats.

Coat the top of the dough with a small amount of olive oil and use your fingers to make dimples all over the focaccia. Pre-cook dough for 8-10 minutes, just until it starts to color slightly, then remove from oven and top with your pizza ingredients: sauce, cheese, and whatever else you want to put on the pizza. Do not put too much on top or the pizza will cave in.

Bake the pizza in the oven for 10-15 minutes until the sides have browned and the cheese is completely melted and bubbling.
