Recipe: Cranberry Brie Bites

This is barely a recipe but it works so well together that I want to post it to encourage people to put these together and have a really delicious day. These come together in just a few minutes and they are something that would really look impressive on a holiday or party table but it’s basically very low effort so I suggest it for your next gathering or any day you want to feel fancy with very little effort.

Ingredients
200 g sheet puff pastry, thawed
 1 egg, beaten
200 g brie, sliced into slices
 4 tbsp cranberry sauce
fresh herbs (rosemary or thyme work well)

Directions
1

Line a baking sheet with parchment paper and preheat an oven to 200°C

2

Unroll the puff pastry sheet then cut the pastry into even pieces of the desired size (this was about 24 squares for me) and brush egg wash over each piece.

3

Place one square on top of another to make a stack of two piece with the egg wash side up and place them on the prepared baking sheet and repeat with the rest of the pastry.

4

Bake for 10 minutes, remove from the oven to place a slice of brie on each puff then put back in the oven and bake about 2-3 minutes watching carefully, removing when the cheese has melted but not begun to leak or burn.

5

Top each puff with a small dollop of cranberry sauce and a few fresh herbs.
