Recipe: Strawberry Rolls with Lime Glaze

Despite it being January if you still have some strawberries frozen from the summer this is a beautiful and deliciously tempting dish. I used frozen strawberries to make the filling but I didn’t thicken it up enough and when I went to roll I lost some of it out the side so make sure that your filling is very very firm and cool before you go to roll.

Strawberry Rolls with Lime Glaze

Ingredients
Dough
 1 cup milk, warmed
  cup sugar
 1.50 tbsp yeast
 ½ cup butter
 2 eggs
 ½ tsp salt
 4.50 cups flour
Filling
 1.50 cups strawberries, chopped finely
  cup sugar
 2 tbsp cornstarch
Lime Glaze
 1 cup powdered sugar
 3 tbsp lime juice

To make the dough in a mixing bowl combined the milk, sugar and yeast. Let the mixture sit for about 5 minutes while the yeast activates.

Once it's activated add softened butter and beat until it is slightly broken up. Then add the eggs, salt, and flour and mix until the dough becomes soft and supple.

Form the dough into a ball and cover the dough and let sit in a warm place until doubled in size, about 2 hours.

Now make the filling (you can skip this step if you just want to use canned strawberry jam). Warm the strawberries in a small saucepan over medium heat.

To the strawberries add the granulated sugar and cornstarch and continue to stir until the mixture thickens.

Remove from the heat, spoon into a heatproof bowl or container, and chill until ready to use.

Grease the bottom of a 9×13 inch baking dish. Turn the dough out onto a lightly floured work surface and, roll into a 12×18 inch rectangle.

Spread the strawberry filling all over the dough then tightly roll up the dough to form a log. Cut into 6 large or 12 small even rolls and arrange them in the prepared baking pan.

Let the rolls rise in the pan for at least 30 minutes.

Bake for about 25 minutes at 375°F, until they are golden brown.

Finish with the glaze which is made by simply whisking the lime juice and confectioners’ sugar together until smooth and then pour this over warm rolls.
