Recipe: Cheesy Broccoli Soup

A super simple way to make broccoli disappear in a matter of minutes. Creamy, rich, not all that good for you but delicious. I actually would use much less cheese and then taste and add as much as you need because I dumped it all in the first time and it was actually too cheesy I ended up putting in some stock to thin out the flavor.

Ingredients
 1 onion, diced
 1 stick butter
  cup flour
 4 cups vegetable stock
 2 cups half and half (or milk)
 16 oz broccoli
 2 cups cheddar, shredded
 1 tsp nutmeg
 salt, pepper

Melt butter in a pot over medium heat, then add the onions. Cook the onions for 3 to 4 minutes, then sprinkle the flour over the top. Once combined pour in stock and half-and-half. Add nutmeg, then add broccoli, some salt and pepper

Cover and reduce heat to low. Simmer for 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt.
