White Chocolate Cheesecake

Ingredients
Crust
 90 g butter, melted
 1.50 cups garham crackers, crushed into crumbs
 60 g sugar
 ½ tsp cinnamon
Filling
 450 g cream cheese
 120 g sugar
 230 g sour cream
 2 tsp vanilla extract
 230 g white chocolate, melted
 3 eggs
 salt
Directions

Combine the cracker crumbs, cinnamon and sugar in a small bowl with the melted butter.

Pour the melted butter over the crumbs and toss to combine

Dump the crumbs into the cake pan and press into an even layer with the back of a spoon.

Combine the softened cheese and sugar in a mixing bowl until it's soft and whipped.

Add to the bowl, the sour cream, white chocolate, and vanilla and mix to combine.

Add the eggs in one at a time and mix gently.

Pour the batter into the cake pan, and bake for 40 minutes until the top browns and the middle jiggles only a little.
