Vada Pav Burger
In a fry pan heat 1 or 2 tsp of cooking and quickly fry the onions and chilies for 1-2 minutes until they start to color slightly. Add the spices and let cook for another 20-30 second just until they smell fragrant.
Mix the batter by whisking together all the batter ingredients in a bowl and adding just enough water to make a thick batter.
Mix the spice mixture into the mashed potatoes, then divide into 4 equal portions. Shape each portion into a ball and then flatten slightly into a patty shape and then dip the patties into the batter to coat completely.
Add just enough oil to the frying pan to shallow fry (about 2-3 cm) and let come to temperature (you can test if it's ready by placing a small dot of batter in and if it floats right to the top and sizzles it's ready for frying), then fry the coated patty in the oil for about 3-4 minutes on each side until golden brown and crispy. Set aside on a paper towel to drain slightly.
Assemble your burger. I coated the bun with sauce, then put a slice of cheese on the bottom, the potato patty, tomatoes, and lettuce but feel free to play around.
