This is a pretty simple recipe though it takes more time to come together then I thought it should. The result is absolutely spectacular though and worth the effort. I’d suggest using really good goat cheese and the freshest tomatoes you can find because there’s no hiding behind bad ingredients here.

I think this was a pretty successful week actually. I might have actually made everything that was on my menu in the correct order actually which almost never happens. I think the results are that are great because it’s so colorful and nice.

This weekend we get to celebrate a friends birthday in a medieval tower and I couldn’t be more excited about it. The weather has been really great too so hopefully I can easily transition from heavy winter dishes to something more light and spring-worthy.

Recipe: Vegetable and Biscuit Bake
This is a delicious and homey dish. A little bit like a mix between vegetable pot pie and a casserole, it’s perfect for when you’ve got the cold weather blues. You can use canned biscuits to speed it up too. I’d also suggest doubling the casserole part without the biscuits if you’re going to freeze it.

This was a really great week for making food. Lots of different types of things and I managed to do all the things I actually wanted to do so I feel really great about these even if I overcooked the boiled eggs (!) which is something I almost never do but oh well, still delicious.
