Lemon Thumbprint Cookies
Beat together sugar and butter until creamy.
Add egg, salt and flour then mix with a spatula until a dough is formed.
Knead the dough a few times until it comes together then chill in the fridge for 30 minutes.
When chilled, form into 20 small balls on a baking tray lined with baking paper.
Use a measuring spoon or your thumb to press a dent in the cookie for the lemon curd.
Fill each dent with lemon curd.
Bake at 180°C for 10-15 minutes until the cookies are golden
