I made these for my Eurovision party on account of Eurovision was in Portugal this year and after spending a week there last year I fell in love with salted cod, locally known as bacalhau. While I had to make my own salted cod it doesn’t involve more than just a little time and a lot of salt. You can skip that part if you really want to save time and just make sure to thoroughly salt your mashed potato mixture instead.

I am trying to be timely about things but somehow if I manage to fall a little behind everything comes down like an avalanche. Next weekend I’ll be in Southern Estonia all weekend so there will be only four lunches (probably) but we’ll just play it by ear as per usual.

Menu: Fondue
I’ve always associated fondue with the dead of winter, sitting in a chalet somewhere in Swiss alps (not that I’ve ever been) but since it’s beautiful, sunny, and nearly 20C right now we might as well have a fondue party this weekend. Otherwise a few new recipes on the docket for this week as I try to get back in to a better groove.

Recipe: Vanilla and Cardamom Scone
I think it only took me an extra two years to make sweet scones but these are the best, they taste super fresh and almost like a cream dessert. They’re even more simple than savory scones but be aware this recipe makes enough for sharing.

Making this menu was somehow really discouraging and I couldn’t say why. It’s just kind of more boring, same things that I always make so maybe I’m just disappointed in not trying something bizzare but we’ll see how the week goes – maybe there’s still time for something exciting.

Recipe: Earl Grey Truffles
I’d never made truffles before but it turns out that they’re basically just balls of ganache that has been half-set and rolled up and they took all of a few minutes to make (plus setting time). You can basically make them any flavor by adding ingredients to the cream too.
