In a hot frying pan add a small amount of butter or oil. In a bowl, whisk the eggs and just as they set add in a handful of the tomatoes and onion (reserving the rest for the meat). Cook until completely set then place on top of the chapati.
To the still hot pan add the rest of the vegetables, chopped chicken, garlic powder, and cayenne and cook for 3-5 minutes until the tomatoes and onions have broken down. Add the cooked meat mixture on top of the egg spread to the edges.
Add the coriander to the top of the pile and then roll until folded all the way.
