Prepare the base of the salad by combining the onion and tomato together.
To that add lemon juice, mint, basil, vinegar, and dried pepper and set aside.
Heat the olive oil in a pan and once hot add the halloumi slices, cooking on both side until brown.
Add the halloumi to the vegetable mix, toss and season with salt and pepper to taste.
