Chicken with Snow Peas

Ingredients
 1 lb chicken, cut in to strips
 150 ml soy sauce
 3 tbsp mirin
 1 tbsp brown sugar
 2 tbsp cornstarch
 2 tsp ground ginger
 500 g snow peas
 3 scallion, minced
 3 tbsp oil
 salt, crushed chilies, white pepper, mustard, to taste

Mix together soy sauce, mirin, brown sugar, corn starch and ginger in a bowl.

Heat oil in a large pan or wok over high heat. Add snow peas and stir fry for one minute.

Add the meat and sear on both sides.

Pour in all the sauce over the chicken and vegetables and cook until snow peas are soft and meat is cooked, 4-5 minutes.

Season and serve over hot cooked rice.
