Beer Soaked Chicken and Vegetables

Ingredients
 4 chicken sausages, cut in to 1" slices
 1 onion, diced
 1.50 cups larger beer
 1 cup chicken stock
 ½ cup green peas
 3 carrots, diced
 1 red pepper, diced
 1 zucchini, diced
 1 tbsp oil
 salt and pepper
Directions

Heat your fat in the bottom of a heavy skillet or dutch oven, brown the meat, then set aside.

In the pan add your onions and cook until caramelized, about 10 minutes.

Add the sausage back in to the pan along with the beer and stock and then bring to a boil for about 15-20 minutes until liquid reduces in half.

Add in the vegetables and cook until soft about 6-8 minutes.
