Recipe: Simple Carrot Soup

I realized I haven’t posted a recipe in quite a while and I’m hoping to rectify that with some old favorites and new recipes I’ve made. Kicking it off is this great carrot soup which is simple and very satisfying. It’s creamy and light at the same time perfect for a quick meal.

Simple Carrot Soup

Ingredients
 10 carrots, chopped in 1" pieces
 ¾ cup vegetable stock
 ¼ tsp fennel
  tsp oregano
  tsp thyme
 salt and pepper
 butter or cream, to garnish

Directions

Put carrots and spices into a sauce pot and pour enough stock to just cover the carrots.

Let cook at medium heat on the stove for 20-30 minutes until soft but not mushy.

Use an immersion blender or food processor to smooth and cream the soup.

Adjust seasoning and serve with a small amount of butter or a bit of sour cream for extra creaminess
