Prep the chicken ahead of time by rubbing salt all over.
Mix all other ingredients in a bowl the rub that all over the skin and inside the chicken as well as under the skin.
Allow to sit in the refrigerator to dry at least 8 hours.
When ready to cook, Preheat oven to 220°C and remove the chicken from the refrigerator and let it come to room temperature.
Place the chicken in a roasting pan and pour about 125ml of water into the pan and roast the chicken for 30 minutes.
Turn the chicken over and roast for another 20 minutes.
Then turn a final time and let cook for 20 more minutes or until cooked.
Let sit for 10 minutes before carving and serving.
