Adapted from King Arthur Flour
Combine all of the ingredients in a bowl, and beat vigorously for 2 minutes.
Cover the bowl, and let the batter rest at room temperature for 1 hour.
Lightly grease a griddle or frying pan, and place well-greased muffin rings in the pan, as many as will fit. Pour batter about halfway up each ring and cook for 4-5 minutes, removing the ring and flipping the crumpets over to cook on the second side for another 5 minutes.
