Chicken Satay Salad

Ingredients
 2 chicken thighs, cooked
 200 g rice noodles, cooked
 ½ red cabbage, thinly sliced
 1 red onion, thinly sliced
 2 carrots, julienned
 mint and cilantro, chopped to taste
 roasted peanuts, chopped
Dressing
 2 tbsp peanut butter
 1 red chili, finely diced
 1 tbsp ginger
 1 garlic clove, minced
 1 lime, zested and juiced

Mix together all the salad ingredients in a large bowl and toss until mixed well.

Make the dressing: Add a small amount of hot water to the peanut butter until thin enough to mix in the rest of the ingredients.

Pour dressing over salad mix and toss to coat.
