Preheat oven to 230°C
In a large mixing bowl mix together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs.
Pour milk into the mixture. Mix until a dough forms.
Turn dough out onto a lightly floured surface and toss with flour until no longer sticky.
Roll dough out into a 1/2 inch thick sheet and cut to desired shapes.
Place biscuits and bake until golden brown, about 12-15 minutes.
While the biscuits cook, make the gravy: Heat a large skillet and melt the butter.
Crumble turkey into then skillet and cook over medium-high heat until browned.
Stir in flour, salt and pepper, and any other seasoning then gradually stir in milk. Cook until mixture thickens, stirring constantly.
