Baked Breaded Eggplant

Ingredients
 1 large eggplant, cut into circles
 1 cup breadcrumbs
 ¼ cup milk
 1 egg
 1 cup flour

Set out three bowls: one with flour, one with the egg and some milk mixed in, and one with breadcrumbs.

Coat with flour, then the egg mixture, then the breadcrumbs.

Coat a baking sheet with cooking spray and place each breaded slice on the sheet.

Cook for 40 minutes on 400°F, flipping half way.
