Recipe: Sweet Potato Biscuits

Just a little twist on your every day biscuit. I rolled them out too thin (they don’t puff quite as much as without the potato weighing them down). These were really nice but I couldn’t really taste the sweet potato in them. That’s not necessarily a downside but you might want to experiment with adding more sweet potato.

Sweet Potato Biscuits

Ingredients
 450 g sweet potato, roasted then mashed
 250 g flour
 15 g baking powder
 3 g ground cinnamon
 5 g baking soda
 3 g salt
 115 g butter, cut into cubes
 180 ml milk
 60 ml maple syrup

Directions

Heat oven 230°C and line a large baking sheet with parchment paper.

In a large bowl mix together the flour, baking powder, baking soda, salt, and cinnamon.

To the bowl, add the butter and cut it into the mixture with your hands until the mixture is coarse.

Add the sweet potato, milk, and maple syrup to the bowl and stir until just combined.

Turn the dough out onto a floured surface and give it a few kneads just to bring together before rolling it to about 2cm thick and then use a round cutter to cut out biscuits.

Bake the biscuits for 10-15 minutes until lightly browned.
