I’ve made these meatballs so many times and forgot to take pictures that I have given up and this sub-par picture will have to do until the next time I make them. These meatballs are great and they have a softer texture and a richer flavor than your average meatball. They’re an added vegetable bonus and they can really stretch out a pound of meat too if you’re on a tight budget (from 16-20 for a pound without sweet potato to 30-36 with the sweet potato).
Sweet Potato and Turkey Meatballs

In a large bowl, mix together all the ingredients well.
Line a baking tray with aluminum foil.
Shape the mixture into meatballs and place on the foil.
Bake in the oven at 400°F (200°C) for 18-25 minutes.
