Recipe: Pub Pretzels

Unlike my other pretzel recipes for softer type pretzels, these come out with the hard tack shell of the outside and the just soft inside like you’d see in a pub. They’re perfect for dipping, game night, or serving as a fun side with a thick soup.

Pub Pretzels

Ingredients
 315 g flour
 6 g salt
 5 g sugar
 12 g yeast
 235 ml water, warmed
Soak and Topping
 120 ml water, boiling
 15 g baking soda
 course salt, for topping

Directions

Combine the flour, salt, sugar, yeast and warm water in a medium bowl then knead the dough for about ten minutes until soft and smooth.

Cover the bowl and let the dough rise for 30 minutes.

Once the dough has risen, preheat the oven to 230°C degrees and line a baking sheet with parchment paper.

On a lightly floured counter top, divide the dough into eight pieces and roll each piece in to a long rope then shape each rope in to a pretzel.

In a bowl mix together the baking soda and water and heat in the microwave until warm then dip each pretzel into the water and place on the prepared baking sheet.

Sprinkle the pretzels with salt and let rest for 10 minutes.

Bake the pretzels for 10-12 minutes until golden brown.
