Recipe: Peri Peri Chicken

This is just a delicious marinated chicken dish. It’s got a nice amount of spice to it but isn’t too overwhelming. This was a big party pleaser and it’s easy to prepare a lot. It’s probably especially nice if you have a grill but I used the oven and it worked out fine.

Ingredients
 1 kg chicken breast, cut into 5cm pieces
 60 ml olive oil
 1 onion, diced
 1 red pepper, diced
 1 jalepeno, chopped
 1 tsp chili powder
 4 cloves garlic, diced
 ½ tsp basil
 ¼ tsp oregano
 1 tsp smoked paprika
 1 lemon, juiced
 salt and pepper

Directions

If you're using wood skewers, soak them in water for an hour.

In a blender or food processor, blend together onion, red pepper, jalapeno, chili pepper, garlic, basil, oregano while drizzling in the olive oil until it makes a paste.

Once blended mix in paprika, lemon juice, salt and pepper to taste.

Marinate the chicken sealed in a plastic bag or container for at least 2 hours.

When ready to make, place the chicken pieces on the skewers.

Grill on an oiled grill over medium heat for 10-15 minutes, flipped halfway OR bake in an oven at 175°C for 20-25 minutes, flipping halfway.
