Recipe: Mulled Wine Cupcakes

These were very interesting but I don’t think I would make them again. The combination of wine and chocolate is a bit too much for me. I’d probably be content just to drink the mulled wine and nibble of some dark chocolate separately. In the future if I make these again I won’t ice them either.

Mulled Wine Cupcakes

Ingredients
 3 tbsp butter
 ½ cup brown sugar
  cup sugar
 1 egg
  cup red wine
 1 tsp cinnamon
 4 cloves
 ½ orange, zested
 1 tsp orange juice
 ½ tsp baking powder
 ½ tsp baking soda
 ¼ tsp salt
  cup cocoa powder
  cup flour
Frosting
 2 tbsp butter
 ½ orange, zested
 ¼ tsp cinnamon
  cup powdered sugar
 ¼ cup mascarpone

Preheat the oven to 350°F. Line a 6 piece muffin tray with muffin cases.

In a large bowl, cream together the butter and sugars until pale and fluffy then Add the egg and mix well.

To this add the spices, wine, and orange juice and mix until the batter is evenly combined.

Fold in all the dry ingredients with a metal spoon until just combined. Divide the mixture evenly in the muffin tin and bake in the oven for approximately 20 minutes.

To make the icing combine butter, orange juice, zest, cinnamon, icing sugar, and mascarpone in a bowl and beat using an electric mixer until smooth
