Recipe: Cranberry and Apple Stuffed Turkey Breast

Okay, so this is not your everyday meal but it also isn’t all that difficult providing that you aren’t completely hopeless at pounding out turkey breast and tying things up with string. While it does have a few minutes of hands on work, after that the meal goes in the oven for a majority of its cook time so you don’t have to babysit it while making your sides which is great. This is a really delicious and impressive meal though and perfect for making any occasion feel like a holiday.

Cranberry and Apple Stuffed Turkey Breast

Ingredients
 2 turkey breasts, skinless
 1 large apple, cored, peeled, and chopped into 1/2" pieces
 100 g cranberries
 100 g walnuts, chopped
 250 g mushrooms, chopped small
 10 g fresh rosemary
 5 g fresh thyme
 butter, oil, or other cooking fat
 salt and pepper

Directions

Preheat your oven to 180°C and prepare a cast iron or other oven safe pan over medium heat with cooking fat of your choice.

With a sharp knife, butterfly each breast open until it lays flat then flatten with a mallet.

Combine the apple, dried cranberries, walnuts, mushrooms, rosemary, thyme, and season with salt and pepper in a bowl and mix well.

Spread the filling mix on top of each breast nearly up to the edge (as if making a jelly roll).

Roll up each breast tightly and tie with cooking twine.

Season the rolled breasts generously on all sides then place the turkey in the heated cast iron or dutch oven and brown on both sides, about 3-4 minutes each side.

Place the cooking vessel in the oven, uncovered, and roast for about 40-50 minutes.

Allow turkey breast to sit for 5-10 minutes before slicing.
