Recipe: Chicken Satay Salad

This is a really delicious salad even though I’m someone who usually doesn’t like savory applications of peanut butter. This has just the right amount of heat and sweet that makes it delicious. My suggestion would be to prepare everything ahead of time except the rice noodle and just make these right before you serve since they don’t really hold up over time.

Ingredients
 2 chicken thighs, cooked
 200 g rice noodles, cooked
 ½ red cabbage, thinly sliced
 1 red onion, thinly sliced
 2 carrots, julienned
 mint and cilantro, chopped to taste
 roasted peanuts, chopped
Dressing
 2 tbsp peanut butter
 1 red chili, finely diced
 1 tbsp ginger
 1 garlic clove, minced
 1 lime, zested and juiced

Directions

Mix together all the salad ingredients in a large bowl and toss until mixed well.

Make the dressing: Add a small amount of hot water to the peanut butter until thin enough to mix in the rest of the ingredients.

Pour dressing over salad mix and toss to coat.
