Recipe: Banana Muffins

Want great banana muffins but you don’t want to spend a ton of time fussing with them? Look no further then this recipe! This recipe doubles easily, is pretty no fuss, is a one bowl recipe and makes great muffins to boot. They come out soft and moist and with tons of banana goodness!

Ingredients
 1 cup sugar
 8 tbsp butter
 4 overripe bananas, mashed
 2 egg
 1 tsp vanilla
 1 tsp baking powder
 1 tsp salt
 2 cups flour

Directions

Cream the butter and sugar together in a large mixing bowl.

Mush the bananas up with the back of a fork (or potato masher) and add them to the creamed mixture.

To the bowl add the vanilla and eggs and stir until well mixed.

Add the dry ingredients and beat by hand until you can see no more lumps of flour.

Pour the batter into greased and lined muffin tins (or a loaf pan if you'd prefer.)

Bake in a 350 degree oven for 15-20 minutes. These are done when the top is firm and golden brown.
