It’s become increasingly obvious that I will never been good at updating anything except for my personal blog. Hard to work 40 hours a week, do the things you love, hang out with good friends, take care of your loved ones AND blog over a few different topics.
Anyway a new week means a new menu.
This week in the CSA came: corn, zucchini, carrots, mixed salad, green beans, peaches, apricots, onions, potatoes, and blueberries
Dinner – Chicken Parmesan w/ Angel Hair Pasta and Zucchini
Breakfast – Fritatta
Lunch – Carrot Soup
Dinner – Chili Lemon Shrimp w/ Green Beans
Breakfast – Cereal
Lunch – Roasted Corn and Veggie Soup
Dinner – Chicken Tacos
Lunch – Sandwiches, Salad and Blueberries
Dinner – Cumin Rice and Salad
Lunch – Leftover Rice and Apricots
Dinner – Zucchini Couscous
Lunch – Soup and Peaches
Dinner – Mashed Potatoes and Chicken and Salad
Lunch – Leftovers
Dinner – Mushroom and Feta Ravioli
That should take care of all that food. I’ll snack up those blueberries and roasted corn as well as grilling any extra zucchini for a yummy side dish. My goal is to use up all the veggies and fruits in the fridge before the CSA comes next Thursday. I managed to do it with the fruit this week but still left from last week are: 2 baby heads of lettuce, a handful of mushrooms, 1 onion, and 3 tomatoes and a handful of spinach which will go into the fritatta basically to use it up.
